RV camping menu plan

Today I am going to share what we ate while we were camping in Leadville, CO. Our RV camping menu isn’t too fancy, nor is it too complicated. I don’t use 17 spices and weird sauces. But I do try to make a few things ahead of time to minimize prep and cook times at camp.

We have a 23 foot travel trailer. It has a 2 burner cooktop, no oven. We have a little toaster oven that we use to keep pancakes warm and cook a few things.

We also have a blackstone grill in the outdoor “kitchen” area, outside of the camper.

You may notice that some of our lunches are cooked. That is because our lunches are cooked on a 2 burner, propane, camp stove that we take on all our adventures. I bring along oil, a spatula, and a pot with a lid. Our food is kept in our Rtic cooler while we are on an adventure. Below is the checklist that I use to ensure I don’t forget anything.

We spent 7 days and 6 nights in Leadville. Below I have outlined what we ate for each meal, on each day we were there.

We got to camp on Sunday afternoon. Our Sunday breakfast was at home. Lunch that day was sandwiches in the camper. It was raining so we ran from the truck to the camper and ate lunch. Once the rain stopped we unhooked and set up camp.

Monday through Friday will have a Breakfast, lunch, and dinner meal.

Then on Saturday, we ate breakfast really fast, then went into town to grab some souvenirs. Once back at camp, we hooked the camper up and left right about noon.

We had lunch in the golf course parking lot in the camper. Which was walking distance from the campground. We had to be out of our spot by noon.

Dinner was our typical Saturday night Costco pizza at home.

Sunday

Breakfast: Eggs and granola bars at home

Lunch: Turkey and ham sandwiches , chips and homemade cookies, in the camper at camp

Dinner: Regina Meal. Yep that’s what we call it. David follows an overlanding couple. The wife’s name is Regina. She made a meal that looked delicious. We have altered it a bit, but essentially we copied it from her. So that is why it’s name the Regina meal.

To make this meal, you add oil to the pan. Dice the zucchini, cook it a bit, add the sausage and cook until done. Add the canned diced tomatoes and cooked noodles. ( I cook them ahead of time and put them in a gallon bag) Stir together until everything is piping hot. Serve in bowls, sprinkle with parm cheese. That’s it friends! Regina’s original meal didn’t have sausage. But in order to make it feed a family of 5, we added meat.

Monday

Breakfast: Carrot cake muffins for kids (I use Kodiak Cakes Protein flour instead of white flour), biscuit (homemade)/sausage/egg sandwiches for grow ups.

Lunch: Sandwiches, chips and homemade cookies

Dinner: Chicken fried rice and egg rolls. The chicken fried rice I don’t have a recipe for. I use already cooked rice, leftover chicken, frozen carrots and peas and eggs. I cook it all in lots and lots of sesame oil and soy sauce. The egg rolls i get from Costco and cook them in the toaster oven, which takes forever!

Tuesday

Breakfast: Biscuit sandwiches again. Kids ate pancakes. I only buy Pearl Milling Company (Aunt Jemima). Because somehow kids can tell the difference…

Lunch: We ate lunch in Breckenridge at Fatty’s Pizzeria. It was very good. We only ordered pizza.

Dinner: Hamburgers, chips and grilled corn on the cob. We wrapped the corn in tin foil and cooked it over the campfire. Hamburgers were cooked on the Blackstone.

Wednesday

Breakfast: Eggs, bacon, sausage links and pancakes. I chopped up a couple chocolate bars and made chocolate chip pancakes.

Lunch: Sausage, brown rice/quinoa and peas. This I made up. I cut up the sausage and cooked it in oil. Then add 2 pouches of brown rice. I pour in about 1/2 a can of chicken broth. I let it simmer for a few minutes. Stir occasionally, then add cooked peas. I’ll add more chicken broth if the rice is starting to stick. I cook everything long enough for the peas to get hot. Then serve in bowls. Everyone eats it. Total win!

Dinner: Leftovers… Chicken fried rice, hamburgers and pizza!

Thursday

Breakfast: Leftovers… bacon, sausage, pancakes

Lunch: Hot dogs and chips

Dinner: Vegetable soup, with chicken and rice

Friday

Breakfast: Eggs and Churro waffles. They are waffles from the pancake mix. I butter both sides, sprinkle cinnamon and sugar on both sides. Then serve with caramel syrup. Yep, with caramel syrup, it’s amazing!

Lunch: Leftover soup and crackers

Dinner: Breakfast for dinner. Diced potatoes, peppers, bacon, eggs. Leftover pancakes and waffles.

Saturday

Breakfast: Whatever is left

Lunch: Sandwiches

Dinner: Pizza at home

Conclusion

Like I said above, our RV camping menu is easy and not too fancy. These meals I usually only make while camping. I don’t make them at home often, except for pancakes… I make a lot of those. That way they are special camping meals that the kids know and love. They look forward to these special camping meals.
